Saag Curry Crumb With Roast Rack Of Lamb








Kit Needed
• Large frying pan with lid
• Wooden spoon
• Cooks knife
• Oven dish
• Small casserole dish
• Chopping board to serve

Shopping List (serves 1)
• Rack of lamb
• Courgette, white onion, & yellow pepper diced (one of each)
• 2 handfuls of spinach
• 1 chopped clove of garlic
• Tin of chopped tomatoes
• 1 tbsp of cumin & turmeric
• Oil to fry
• Generous amount of Crunchy Curry Crumb



Method:

1. Heat the oven to 180 degrees, at the same time add the oiled frying pan to a medium heat.

2. Fry the garlic, onion, courgette and peppers with the turmeric and cumin for around 1 minute until softened.

3. Next add the tinned tomatoes and spinach to the pan, season and cover for 2 minutes.

4. Once cooked decant into the small casserole dish, sprinkle with a generous amount of the Crunchy Curry Crumb and add to the preheated oven for 10 minutes.

5. Meanwhile roll the rack of lamb in the remaining Crunchy Curry Crumb and then add to the oven for 10 minutes until pink, or until desired colour is achieved.

6. Remove the curry and lamb from the oven. Leave the lamb to rest for 4 minutes, before carving and serving on a nice chopping board with the saag curry.

7. Get settled and enjoy your curry for one!
