Christmas Dinner - Sprouts, Cauliflower & Root Veg







Kit Needed:
• 3 saucepans
• Cooks knife
• Wooden Spoon
• Whisk
• 3 baking dishes

Ingredients:
• Around 15 brussels sprouts
• 2 handfuls of GBB Crunchy Curry Crumb
• 1 whole cauliflower
• 50g butter & flour, & 1 + a half pints of whole milk for sauce
• Good sprinkling of Roast Garlic & 3 Onion Crumb
• Selection of root vegetables
• Salt, full bulb of garlic, rosemary & thyme to season



Method:

1. Pre heat your oven to 200 degrees, and put two pans of salted water on to boil.

2. Chop up your selection of root vegetables into varying sizes, and add to an oiled oven dish with a full bulb of garlic, rosemary and time. Add to the oven for around 30 minutes, until cooked through and golden brown.

3. Trim the leaves and remove the base from the cauliflower, before submerging in a pan of salted water for around 10 minutes to speed up the cooking process.

4. Whilst your cauliflower is cooking, create a basic bechamel sauce. Add the butter and flower to a pan, on a low heat, and beat with a wooden spoon for around 1 minute. Slowly mix in the milk, whilst constantly whisking to prevent any lumps. Cook for around 5 minutes total, until you have a thick and glossy sauce. Chefs tip: add in some grated cheese for an easy cheese sauce.

5. After 10 minutes remove the cauliflower and run under a cold tap to stop the cook. Add the cauliflower to one of the oven dishes, and top with the bechamel sauce and the Roast Garlic & 3 Onion Crumb. Bake in the oven for around 20 minutes or until golden brown.

6. Blanch the whole sprouts in salted water for around 4 minutes, (longer if you prefer a softer sprout), and then run under a cold tap to stop the cook.

7. Sliced the sprouts into two, and add into the last oven dish, topped with the Crunchy Curry Crumb. Bake until golden brown, which will be around 15 minutes.
