Kit Needed
• Chargrill pan
• Baking tray
• Mixing bowl
• Sharp knife

Shopping List (serves 1, easily doubled)
1 whole poussin
• Approx 3 heaped tbsp of British BBQ Rub
• 2 pitta breads
• 1/2 orange
• 1/2 white onion
• Wedge of red cabbage
• Handful of coriander
• Salt & pepper for seasoning



Method:

1. Heat the oven to 200 degrees c.

2. Coat the poussin with a generous amount of the British BBQ rub.

3. Roast for half an hour-ish. Chefs tip: Wiggle the leg and if it moves easily it's ready to come out.

4. Chargrill the pittas in a hot chargrill pan until coloured.

5. To create the summer slaw, finely slice the cabbage and onion, and add to the mixing bowl. Then season with salt and pepper, squeeze over the 1/2 orange and tear on some coriander.

6. Serve everything up together on a wooden board, and enjoy!
