Crunchy Curry Crumb Chicken Supreme Salad







Kit Needed:
• Mixing bowl
• Sharp knife
• Baking tray

Shopping List:
• Chicken Supreme
• Handful of Crunchy Curry Crumb
• Cucumber
• Couple of radishes
• Fresh coriander
• Red chilli
• Few spoons of natural yoghurt
• Splash of white wine vinegar
• Rock salt
• Olive oil
• Wedge of lemon to serve



Method:

1. Pre-heat the oven to 180 degrees.

2. Coat the chicken supreme in the the crunchy curry crumb, and place onto an oiled baking tray.

3. Roast in the oven for around 25 minutes until cooked through.

4. Whilst cooking, chop the cucumber in  half, grate one half and mix in with the fresh yoghurt for a cooling sauce.

5. Chop the remaining half cucumber into half moons, finely slice the radish and chives and toss together with a dash of olive oil, white wine vinegar and rock salt.

6. Finally chop the chilli on a 45 degree angle, and mix with the coriander.

7. Plate up, and serve with a wedge of lemon.
